Moroccan Salad Dressing



There's a really brilliant mixture of Moroccan salad dressing that I use very often, and it's great because you can put various vegetables in the mix and it tastes delicious. Some people may say that it's Italian, and that is fair enough. You can use the following mixture of vegetables:

  • 1 cup of carrot and 1 cup of potato. Peeled, chopped finely and boiled
  • 1 cup of carrot and 1 cup of peas. prepared as above
  • 2 cups of beetroot (4-5 medium beetroots), cleaned, boiled, then peeled and chopped finely.
Drain the desired mix of vegetables and place in a bowl.

Recipe for Moroccan Salad Dressing:
  • 1 tbsp olive oil
  • 1 tbsp vinegar
  • half of one small onion, chopped very finely
  • 1/4 cup of chopped parsley 
  • 1/4 tsp pepper
  • salt to taste
 Mix the salad dressing in a bowl with the vegetables. Garnish with parsley if desired.
